This recipe is so good you'll be begging your bananas to hurry up and turn spotty and brown.
Make a loaf one of these rainy April afternoons! Here's how:
1/2 c. butter
1 c. sugar
2 eggs
1 c. mashed bananas (about 2 large bananas)
1/4 c. milk
1 t. lemon juice (I like to be a little generous with this, I think it's the secret ingredient)
2 c. flour
1 1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/2 c. chopped walnuts or pecans
* Sometimes we like to add chocolate chips, too, but then it feels really sinful to eat it for breakfast the next morning...so, think on that one...
Cream butter and sugar
Add eggs and mix
Add bananas, milk and lemon juice
Sift dry ingredients & add nuts
Bake at 350 in well greased loaf pan for 1 hour.

just made this and LOVED it. yum. thanks.
i made muffins and mini muffins. and just in case anyone is wondering... it made 12 regular muffins (baked for 24-ish minutes) and 12 minis (baked for 15-ish minutes).
next time i want to try adding in craisins.
