This is the go-to chocolate glaze around here. It is sooo easy and delish and I love how it looks!
From the Joy of Cooking: -Bittersweet Chocolate Glaze or Frosting-
In the top of a double boiler or in a microwave on medium, heat, stirring often, just until the chocolate is melted and smooth:
6 oz bittersweet or semi-sweet chocolate, coarsely chopped (I use 1/2 a bag of semi-sweet chocolate chips--guittard or ghiradelli) and 6 tablespoons milk
Remove from heat. With a rubber spatula, stir in 2 or 3 pieces at a time: 6 tablespoons butter, cut into small pieces
Continue to stir (do not beat) until perfectly smooth.
When it is still fairly warm, I like to just dip the tops of my cupcakes in. It's so fast and easy! If you let it cool longer, it becomes thicker like a frosting. I much prefer the glaze.
